INGREDIENTS
Grains and Nuts
- ½ cup pine nuts
- 1 ¼ cups uncooked jasmine rice
- 2 ounces spaghetti, broken into small pieces
Dairy
- 🧈 ¼ cup butter
Vegetables and Herbs
- 🧅 ¼ cup minced onion
- 🧄 ½ teaspoon minced garlic
- 2 tablespoons chopped fresh parsley
Liquids and Seasoning
- 2 ¼ cups chicken broth
- 🧂 Salt to taste
- Ground black pepper to taste
STEPS
Preheat oven to 350 degrees F (175 degrees C). Spread pine nuts on a baking sheet.
Toast pine nuts in the preheated oven until golden brown, about 12 minutes.
Melt butter in a saucepan over medium-low heat. Increase heat to medium and stir in spaghetti; cook until coated with melted butter and lightly browned, 3 to 5 minutes.
Add onion and garlic; cook until tender, about 2 minutes.
Stir rice into the saucepan; cook for 5 minutes.
Pour chicken broth into the saucepan. Bring to a boil; cover and cook until rice is tender and liquid has been absorbed, about 20 minutes.
Season with salt and pepper, then mix toasted pine nuts and parsley into the rice mixture.
