INGREDIENTS
Flours
- 4 cups whole wheat flour
- 3/4 cup all-purpose flour
Leavening Agents
- 1 1/4 tablespoons dry active yeast
Dry Ingredients
- 1 cup non-fat dry milk powder
Liquids
- 💧 1 1/2 cups warm water
Fats and Sweeteners
- 1/3 cup oil
- 3 tablespoons sugar or honey
Eggs
- 🥚 2 large eggs (alternatively 4 egg whites)
Seasonings
- 🧂 1 teaspoon salt
STEPS
Wash hands with soap and water.
Mix 2 1/2 cups of whole wheat flour, dry yeast, and non-fat dry milk in a large mixer bowl. Add water, oil, and sugar (or honey). Mix well for 1 to 2 minutes.
Turn off mixer, cover the dough, and let it sit for 10 minutes.
Add eggs and salt into the mixture. Turn on the mixer. Gradually add the remaining flour, 1 cup at a time, until the dough begins to form a ball.
Knead the dough for 5 to 6 minutes until it is very soft and manageable. If the dough becomes stiff, drizzle a little warm water over it while kneading.
Dough can be used immediately or covered and stored in the refrigerator for several days.
Lightly oil your hands and countertop if necessary. Shape the dough into rolls. Let them rise until very light.
Bake the rolls at 350°F (175°C) for 18 to 20 minutes. Do not overbake.
