Main Ingredients
- 1 pound dried figs
- 🥛 ½ cup buttermilk
- 🍬 1 cup white sugar
- 🧈 ½ cup unsalted butter, softened
- 🥚 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts
STEPS
Preheat the oven to 350°F (175°C) and prepare a 10-inch tube pan by greasing and flouring it.
Place dried figs into a saucepan, cover with water, and simmer over low heat until soft (around 5 minutes). Drain the figs while reserving ½ cup of cooking liquid.
Sift the flour, baking powder, salt, baking soda, cinnamon, and cloves into a bowl.
Cut figs into ¼-inch cubes and combine the reserved cooking liquid with buttermilk in a medium bowl.
In a large bowl, beat the sugar and butter with an electric mixer until light and fluffy. Add eggs one at a time, followed by vanilla. Alternate mixing in the dry ingredients and buttermilk mixture, then stir in figs and walnuts.
Pour the batter into the prepared pan and bake in the preheated oven for 50 to 60 minutes, or until a toothpick comes out clean.
Cool the cake in the pan for 15 minutes before turning it out onto a wire rack to cool completely.
