INGREDIENTS
Dairy
- 🥛 1¾ cups buttermilk
Dried Fruit
- 🍑 12 ounces dried Calimyrna figs, coarsely chopped
Grains
- 1½ cups white whole-wheat flour
- 1½ cups dry bread crumbs

- 2½ teaspoons baking powder
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 🧂 1 teaspoon salt

- 🥚 3 large eggs

- 🧈 ½ cup butter, melted

- 🌰 1 (2.45 ounce) package sliced almonds
Citrus
- 🍊 3 tablespoons orange marmalade
- 1 tablespoon grated orange zest
- ½ teaspoon orange-vanilla flavoring
STEPS
Gather all ingredients.
Heat buttermilk and figs in a saucepan over medium-low heat until softened, then set aside until cool.
Preheat oven to 350°F (175°C) and grease a tube pan and one side of a sheet of aluminum foil.
Sift flour, sugar, baking powder, nutmeg, cinnamon, and salt together in a bowl.
Beat eggs in a large bowl for 1 minute. Add cooled fig mixture, bread crumbs, melted butter, almonds, orange marmalade, orange zest, and orange-vanilla flavoring; beat on low to blend.
Gradually mix in the sifted flour mixture until just incorporated.
Spoon batter into the prepared pan and cover with greased foil.
Bake in preheated oven for 1 hour 15 minutes to 2 hours until firm and pulling away from pan sides.
Remove from oven, cool in pan for 10 minutes, then turn out onto a wire rack.
