INGREDIENTS
Main Ingredients
- ๐ 1 pound skinless cod fillets
- ๐ 2 cups canned low-sodium diced tomatoes
- 2 cups frozen spinach
- 1/4 cup Kalamata olives
Supporting Ingredients
- 1 tablespoon vegetable oil
- ๐ง 1 yellow onion, diced
- ๐ง 2 cloves garlic, minced
- ๐ง 1/2 cup water
STEPS
Place a skillet on the stove over high heat. When hot, add 1 1/2 teaspoons of oil.
Add the cod fillets and cook for 5 minutes on each side until deeply browned. Remove the fish and cover.
Reheat the skillet over medium heat. Add the remaining oil, diced onion, and minced garlic. Cook for about 7 minutes until softened.
Add the diced tomatoes and water to the skillet. Cook for 10 minutes until the mixture thickens and turns orange.
Return the fish to the skillet. Cover it with spinach and sprinkle the olives on top. Cover the skillet, lower heat, and cook for 2 minutes until the spinach is steamed.
Serve immediately. Consider pairing with a favorite side dish such as rice or bread.
