INGREDIENTS
Steak
- 1 (1 pound) flat iron steak
Dry Seasoning
- 🧂 1 ½ teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Cooking Oil
- 1 tablespoon vegetable oil, divided
Mushrooms and Sauce
- 8 ounces cremini mushrooms
- ½ cup Burgundy wine
- 1 cup beef stock
- 🧈 1 tablespoon butter, softened
- 1 tablespoon all-purpose flour
- ½ cup heavy cream
- 2 tablespoons chopped fresh chives
STEPS
Preheat the oven to 325°F (165°C).
Season both sides of the flat iron steak with salt, black pepper, garlic powder, and onion powder.
Heat a heavy, oven-proof skillet over medium-high heat. Add 2 teaspoons vegetable oil until shimmering. Sear the steak until well browned, about 3 minutes per side. Transfer the steak to a plate.
Reduce the heat to medium. Add the remaining 1 teaspoon vegetable oil to the skillet. Add mushrooms and cook until wilted and browned, about 10 minutes.
Reduce heat to medium-low, add wine, and bring to a boil. Cook until wine is slightly reduced, about 3 to 5 minutes. Add beef stock and bring to a simmer.
Mash butter and flour in a small bowl into a paste using a fork. Stir it into the mushroom mixture. Simmer until the sauce thickens, about 5 minutes.
Return the flat iron steak to the skillet and cook in the preheated oven until barely pink inside, about 10 minutes. Remove steak and let it rest.
Slice the steak thinly on the diagonal against the grain and place on a platter.
Stir the cream into the mushroom sauce until heated through, about 1 to 2 minutes. Pour the sauce over the steak and garnish with chives.
