INGREDIENTS

  • Vegetables

    • 4 large red bell peppers
  • Nuts & Seeds

    • 1/3 cup slivered almonds, toasted
  • Oils & Condiments

    • 1/4 cup olive oil
    • 🍋 1 tablespoon lemon juice
  • Herbs

    • 2 tablespoons chopped fresh basil
    • Basil leaves for garnish
  • Spices

    • 🧂 1/2 teaspoon salt
    • Black pepper for garnish
  • Others

    • 1 14.1 ounce package flatbreads
    • 🧀 2 cups shredded fontina cheese
    • 🍗 1 cup shredded cooked chicken
    • 1/2 cup kalamata and/or green olives
    • 🧄 2 cloves garlic, smashed

STEPS

1

Preheat the oven to 450°F (230°C) and line 2 baking sheets with foil. Arrange half of the peppers, cut sides down, on each prepared baking sheet.

2

Roast peppers in the oven until skin is blistered and charred, about 30 to 40 minutes. Transfer peppers to a large bowl, cover with plastic wrap or a tea towel, and let stand until cool enough to handle (20 to 30 minutes). Remove and discard skins; ensure you have about 2 cups of roasted peppers.

3

Reduce oven temperature to 425°F (220°C).

4

For the sauce, blend roasted peppers, almonds, olive oil, chopped basil, lemon juice, garlic, and salt in a blender or food processor until smooth.

5

Remove foil from baking sheets and arrange flatbreads on each sheet. Spread each flatbread with 1/2 cup of sauce (reserve remaining sauce for another use). Top evenly with cheese, chicken, and olives.

6

Bake flatbreads in the oven for 8 to 9 minutes until cheese is melted and edges are browned. For a crispier crust, bake directly on the oven rack instead of on baking sheets for 6 to 7 minutes.

7

Garnish with black pepper and additional basil. Cut each flatbread into 6 slices before serving.
