INGREDIENTS
Dry
- 1 ½ cups whole raw almonds
- 3 tablespoons all-purpose flour
Wet
- 🧈 ½ cup unsalted butter
- 🧂 ¾ cup light brown sugar
- 🍯 ¼ cup honey
- ½ teaspoon vanilla extract
Optional
- 1 pinch salt
- 🍫 1 cup semisweet chocolate chips, melted
STEPS
Preheat the oven to 350°F (175°C) and line a baking sheet with a silicone liner.
Finely chop almonds in a food processor or by hand.
Combine butter, brown sugar, and honey in a saucepan over medium heat, stirring until melted and dissolved. Once boiling, remove from heat.
Add vanilla extract, salt, and flour into the saucepan and whisk until smooth. Mix in chopped almonds.
Drop spoonfuls of batter onto the prepared sheet and shape evenly.
Bake cookies until golden brown, 10–12 minutes, rotating the pan halfway through.
Let cookies cool and crisp for 3–5 minutes before peeling off the liner.
Spread melted chocolate on the flat side of one cookie and sandwich with a second cookie. Repeat for all cookies and let chocolate set for about 30 minutes.
