INGREDIENTS
Fish
- 🐟 200g yellowtail fillets
Vegetables
- 4 shishito peppers
Seasoning
- 🧂 Pinch of salt
- Potato starch as needed
- 2 tbsp cooking sake
- 1/2 tbsp salad oil
Sauce
- 1 tbsp sake
- 🍬 1/2 tbsp sugar
- 1 tbsp mirin
- 🧂 1 tbsp soy sauce
STEPS
Trim the stems of shishito peppers and make a vertical cut.
Sprinkle salt on both sides of the yellowtail fillets and let sit for 5 minutes. Pat dry with a paper towel and coat lightly with potato starch.
Heat salad oil in a pan over medium heat. Add shishito peppers and cook until both sides are browned. Remove from the pan.
In the same pan, add the yellowtail fillets and cook over medium heat for 3 minutes until browned. Flip and cook for another 2 minutes. Add 2 tbsp of cooking sake, cover, and steam over low heat for 1 minute.
Add the sauce ingredients (sake, sugar, mirin, soy sauce) to the pan and simmer over medium heat. Spoon the sauce over the fillets as it thickens.
Plate the yellowtail fillets and garnish with the cooked shishito peppers.
