- 6 tablespoons white sugar

Shortcake
- πΎ 2 cups all-purpose flour
- 1/4 cup white sugar
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- π° 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- π§ 1/2 teaspoon salt
- π§ 1/2 cup frozen butter
- π₯ 1 egg, beaten
- π₯ 1/2 cup cold half-and-half, or more as needed
- π₯ 1 egg white (optional)
- 1 teaspoon white sugar, or to taste
Toppings
- 1 cup whipped cream
- π° 1 cup chopped almonds
- π 6 cherries with stems
STEPS
Combine cherries, sugar, and lemon zest in a bowl. Let rest for 2-3 hours.
Preheat oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper.
Mix flour, sugar, cream of tartar, baking soda, cinnamon, cardamom, and salt in a bowl. Cut in butter until coarse crumbs form. Stir in beaten egg and half-and-half until dough clumps.
Roll tennis ball-sized portions, press to 1/2-inch discs, brush with egg white, and sprinkle with sugar.
Bake until golden brown, about 12-14 minutes. Cool on a wire rack.
Slice cakes in half. Fill with cherries, whipped cream, and almonds. Top with whipped cream, almonds, and a whole cherry.
