Heat olive oil and garlic in a pot over low heat until fragrant. Add onion and sauté for 5–6 minutes over medium-low heat. Add carrot and shiitake mushrooms, stirring until coated in oil. Add ground meat and cook until browned.

Add red wine and stir. Once boiling, add tomatoes, water, ketchup, Worcestershire sauce, and bay leaf. Cover and simmer on low heat for 15–20 minutes.
