INGREDIENTS
Base
- 🍉 8 cups diced seeded watermelon, divided
- 🥒 1 cucumber - peeled, seeded, and diced, divided
- 1 jalapeno pepper, minced
- 3 tablespoons red wine vinegar
- 1 cup fresh blueberries
STEPS
Combine 6 cups of watermelon, half of the diced cucumber, minced jalapeno pepper, and red wine vinegar in a blender. Blend until smooth.
Pour the blended mixture into a large bowl and mix in the remaining 2 cups of diced watermelon and cucumber for texture.
Refrigerate the soup for at least 30 minutes until thoroughly chilled.
Serve the gazpacho in 4 bowls and add fresh blueberries as garnish on top.
