INGREDIENTS
Squash Blossoms
- 12 fresh zucchini blossoms
- 2 cups vegetable oil for frying, or as needed
Cheese / Dairy
- 🧀 ¾ cup soft goat cheese at room temperature
- 🧀 ¼ cup shredded Gruyère cheese
- 🥚 1 large egg yolk
Spices / Seasonings
- 🧂 1 pinch freshly ground black pepper, or to taste
- 1 pinch cayenne pepper
- 🌾 1 teaspoon all-purpose flour, or as needed
Flour / Starches
- 🌾 1 cup self-rising flour
- ½ cup cornstarch
- 💧 ¼ cup ice-cold water, or as needed
STEPS
Gently rinse squash blossoms to remove dirt or debris; remove the stamens.
Boil lightly salted water and plunge squash blossoms for 30-45 seconds, then immediately chill in ice-cold water.
Mix goat cheese, Gruyère, egg yolk, black pepper, and cayenne into a smooth filling.
Pipe filling into each squash blossom and fold petals over the filling. Refrigerate for at least 30 minutes.
Combine self-rising flour and cornstarch with ice-cold water until batter forms.
Heat 1 inch of oil to 350°F (175°C). Dust squash blossoms with flour before dipping in batter.
Fry in oil until golden brown, flipping sides as necessary. Drain on paper towels.
Let cool slightly before serving.
