INGREDIENTS

- 🍗 250g chicken thigh
Vegetables
- 🍆 80g eggplant, sliced
- đź§„ 1 clove garlic, thinly sliced
Seasoning
- 1 tbsp sake
- đź§‚ Salt and pepper to taste
- 1 tbsp cornstarch
- 2 tbsp salad oil
- đź§„ 1/2 tsp minced garlic
- 2 tbsp ponzu sauce
Garnish
- đź§… Chopped green onion to taste
STEPS
Slice the eggplant diagonally and thinly. Thinly slice the garlic.
Cut the chicken into bite-sized pieces. In a bowl, mix chicken with sake, salt, and pepper, then coat with cornstarch.
Heat salad oil and garlic in a frying pan over medium heat until garlic turns golden brown. Remove garlic.
Add chicken to the pan and stir-fry over medium heat until cooked through.
Add eggplant to the pan and stir-fry until softened. Add minced garlic and ponzu sauce, then simmer briefly.
Plate the dish, garnish with the reserved garlic slices and chopped green onion.
