INGREDIENTS
Main
- 🍗 300g chicken thigh
- 3 tbsp potato starch
- 3 tbsp all-purpose flour
- Enough salad oil for frying
Seasoning
- 1 tbsp sake
- 1 tbsp soy sauce
- đź§„ 1 tbsp grated garlic
Coating
- 2 tbsp potato starch
STEPS
Trim excess fat from the chicken thigh and cut into bite-sized pieces.
Place chicken pieces in a plastic bag with sake, soy sauce, and grated garlic. Massage well and seal the bag. Let it marinate for 15 minutes.
Add 3 tbsp potato starch and all-purpose flour to the bag. Massage until evenly coated. Place 2 tbsp potato starch in a tray and coat the chicken pieces.
Heat 2 cm of salad oil in a frying pan to 170°C. Fry the chicken for 1 minute without touching, then flip and fry for 3 minutes. Remove and let rest for 5 minutes.
Increase oil temperature to 180°C. Fry the chicken again for 1 minute, flipping occasionally, until the coating is crispy and the chicken is cooked through.
