INGREDIENTS
Staples
- 2 slices of bread
- π§ 1/4 cup water
Vegetables
- π 5 tomatoes
- π₯ 1 cucumber
- 1 bell pepper
- π§ 2 cloves garlic
Condiments
- 1/4 cup olive oil
- 2 tbsp vinegar
- 1 tsp low-sodium adobo seasoning
Garnishes
- π Chopped tomatoes for garnish
- π§ Chopped onions for garnish
- Chopped bell peppers for garnish
- π₯ Boiled eggs for garnish
STEPS
Tear bread into small pieces and soak in 1 cup of water until saturated, about 900 seconds.
Squeeze water from bread and discard soaking water.
Combine bread, tomatoes, cucumber, bell pepper, garlic, and 1/4 cup water in blender or food processor.
Blend until combined. Gradually add olive oil while motor is running.
Add vinegar and season with low-sodium adobo seasoning.
Strain the mixture through a small-hole strainer into a soup terrine. Discard solids.
Cover terrine and chill soup in the refrigerator for at least 3600 seconds.
Divide chilled soup into bowls and garnish with tomatoes, onions, peppers, and eggs before serving.
