INGREDIENTS
Noodles
- 1 pack cooked udon noodles
Meat
- 80g sliced pork
Vegetables
- čå 1 medium eggplant, diced
- ę“č± 1/4 onion, thinly sliced
- 2 tbsp chopped green onion
Seasonings
- 2 tsp all-purpose flour
- 1 tbsp vegetable oil
- 1 tbsp sake
- 2 tbsp mirin
- 1 tbsp soy sauce
- 1/2 tbsp grated ginger
STEPS
Dice the eggplant into 1cm cubes and thinly slice the onion.
Coat the sliced pork with all-purpose flour.
Mix the seasoning ingredients (sake, mirin, soy sauce, ginger) in a bowl.
Heat vegetable oil in a frying pan over medium heat, then add pork, eggplant, and onion. Stir-fry until the pork is cooked through.
Add the cooked udon noodles to the pan and stir-fry while loosening them. Pour in the seasoning mixture and stir to combine.
Serve on a plate and garnish with chopped green onions.
