INGREDIENTS
Grains
- 1 cup quinoa
Liquids
- 💧 1 1/2 cups water or low-sodium broth
- 🍋 2 1/2 tablespoons lemon juice
- 2 tablespoons reduced sodium soy sauce
Vegetables
- 🥗 2 cups green beans
Oils
- 1 tablespoon olive oil or cooking oil
- 1 tablespoon sesame oil
Spices
- 1/4 teaspoon ground ginger
STEPS
Wash hands with soap and water.
Toast quinoa in a dry skillet over medium heat, stirring constantly for about 3 minutes.
Transfer toasted quinoa to a medium pot and add water or broth.
Bring to a boil, then let simmer until all of the water is absorbed and quinoa is tender (10 to 15 minutes).
Set aside and leave uncovered to cool.
While quinoa is cooling, place green beans in a microwave-safe dish. Add a small amount of water, cover, and microwave for 4-6 minutes or until just tender.
Rinse green beans in cold water to stop the cooking process.
In a large bowl, combine the quinoa, green beans, olive oil or cooking oil, sesame oil, soy sauce, lemon juice, and ground ginger. Stir well.
Season with salt and pepper, as needed.
Serve warm or at room temperature.
