INGREDIENTS
Vegetables & Aromatics
- 🧅 1 small Spanish onion
- 1/2 green bell pepper
- 🧄 2 cloves garlic
Seasonings & Condiments
- 1 teaspoon vegetable oil
- 1 teaspoon dried thyme
- 🍅 2 tablespoons tomato paste
- 💧 1/2 cup water
- 1 tablespoon yellow mustard
- 🧂 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Proteins & Binders
- 1 pound ground beef or turkey
- 🥚 1 large egg
- 1/2 cup rolled oats
STEPS
Preheat the oven to 325°F and lightly grease a baking sheet.
Heat a skillet over medium heat, add oil, then cook onion, bell pepper, garlic, and thyme for about 10 minutes until golden.
Add water and tomato paste to the skillet, lower the heat, and cook for another 10 minutes until onions are soft and the liquid is absorbed.
Stir mustard, salt, and pepper into the skillet mixture, then allow it to cool.
In a mixing bowl, combine ground beef, 4 tablespoons rolled oats, and the egg. Mix lightly by hand.
Add the cooled skillet mixture to the meat mixture and mix gently until combined but not overmixed.
Shape the mixture into a loaf (approximately 8x4 inches) and place it on the prepared baking sheet.
For the glaze: mix tomato paste and mustard in a small bowl, spread over the loaf, and sprinkle with the remaining rolled oats.
Bake the meatloaf in the oven for 1 hour or until browned and cooked through. Serve immediately or refrigerate for up to 2 days.
