INGREDIENTS
Base
- 🧈 1 cup unsalted butter, softened
- 🟤 ¾ cup brown sugar
- 🟡 ½ cup white sugar
- 🥚 2 large eggs
- 🧂 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 🌾 2 ½ cups gluten-free flour blend
- 🧂 1 teaspoon baking soda
- 🧂 1 teaspoon salt
- ½ teaspoon xanthan gum
Mix-ins
- 🍫 8 ounces white chocolate chips
- ¾ cup shredded coconut
Topping
- 16 ounces cream cheese frosting
- ½ cup chopped dried cranberries
STEPS
Preheat the oven to 350°F (175°C) and butter a 9x13-inch pan.
Beat butter, brown sugar, white sugar, eggs, cinnamon, and vanilla extract until smooth.
Combine gluten-free flour blend, baking soda, salt, and xanthan gum in a separate bowl, then mix half of it into the wet ingredients. Gradually combine the remaining dry ingredients along with white chocolate chips and shredded coconut, ensuring everything is well mixed, then press the dough into the prepared pan.
Bake for 23 minutes until edges are browned. Let the cookie bars cool completely for about 30 minutes.
Spread cream cheese frosting over the cooled bars and sprinkle with chopped cranberries. Cut into 48 triangles.
