INGREDIENTS
Burgers
- 🧄 4 large unpeeled garlic cloves
- 1 ¼ pounds ground lamb
- ½ cup crumbled feta cheese
- ¾ teaspoon dried oregano
- 🧂 ½ teaspoon salt
- ½ teaspoon ground black pepper
Sauce
- 🥒 ½ large cucumber, peeled, grated and squeezed very dry in a clean towel
- ¾ cup sour cream
- 1 tablespoon minced fresh mint leaves
- 1 teaspoon red or rice wine vinegar
- 🧄 1 clove garlic, minced
- Salt and pepper to taste
Assembly
- 4 small (4 inch) pita breads
- 🧅 4 large, thin red onion slices
- 🍅 4 large, thin tomato slices
STEPS
Toast garlic in a skillet over medium-high heat until spotty brown. Peel, mince, and set aside.
Mix ground lamb with minced garlic, feta, oregano, salt, and pepper. Divide mixture into 4 equal portions, form patties and refrigerate.
Prepare cucumber sauce by mixing cucumber, sour cream, mint, vinegar, and garlic. Season with salt and pepper, then refrigerate.
Grill patties over hot fire for about 4-5 minutes per side until internal temperature reaches 160°F. Rest the patties.
Toast pita breads on grill for about 1 minute per side and split. Assemble burgers: spread sauce, layer onion, tomato, patty, and top with remaining pita halves.
