INGREDIENTS
Marinade
- 🧄 8 cloves garlic
- 6 tablespoons extra-virgin olive oil
- 🍋 1/4 cup lemon juice
- 1 tablespoon dried oregano
- 🧂 1 tablespoon kosher salt
- 1 teaspoon crushed red pepper
- 3/4 teaspoon black pepper
- 2 pounds lamb rib or loin chops, trimmed
Drizzle
- 2 tablespoons extra-virgin olive oil
- 🍋 1 tablespoon lemon juice
- 1 teaspoon oregano
- 🧂 1/2 teaspoon kosher salt
- 1/2 teaspoon crushed red pepper
STEPS
Whisk together garlic, 1/4 cup olive oil, 3 tablespoons lemon juice, 2 teaspoons dried oregano, 2 teaspoons kosher salt, 1/2 teaspoon crushed red pepper, and 1/2 teaspoon black pepper in a small bowl.
Place lamb chops in a resealable plastic bag, pour marinade over, remove air, seal, and refrigerate for 4-12 hours. Let stand 30 minutes at room temperature before cooking.
Preheat grill to High (450-500°F). Scrape marinade off lamb chops and sprinkle with 1/2 teaspoon salt and remaining 1/4 teaspoon black pepper.
Grill lamb chops on oiled grates for 4-6 minutes depending on thickness and desired doneness (medium-rare 130°F). Turn using tongs to sear edges. Let rest for 5 minutes on a platter.
Whisk remaining olive oil, lemon juice, oregano, salt, and crushed red pepper to create a drizzle. Drizzle over lamb chops and serve immediately.
