INGREDIENTS
Starch
- 🥔 4 baking potatoes, scrubbed
Spices & Seasonings
- 🧂 1 ¼ teaspoons salt
- 2 tablespoons freshly ground black pepper
- 1 cup brown sugar
Meat
- 🥓 12 slices bacon

STEPS
Preheat an outdoor grill for medium-high, indirect heat.
Cut each potato into 5 thick slices, without cutting all the way through. Place potatoes onto squares of aluminum foil.
Sprinkle 1/4 teaspoon salt into the sliced areas of a potato, then wrap potato with 3 slices of bacon, securing with toothpicks if needed. Brush potato with about 1 1/2 tablespoon olive oil, then sprinkle with 1/4 cup brown sugar and 1 1/2 tablespoons black pepper. Wrap potato loosely in the foil. Repeat to prepare remaining potatoes.
Grill potatoes on the preheated grill over indirect heat until bacon is crisp and potato is soft in the center, about 30 to 45 minutes.

💡 Use indirect heat on the grill to prevent the potatoes and bacon from burning.Wrap the foil tightly but leave a little room for steam to escape, enhancing the flavors. For a smoky flavor, add wood chips to your grill while cooking.
