INGREDIENTS
Vegetables
- 3 green onions
- 6 cups shredded Savoy, Napa, or green cabbage
- 🥕 2 carrots
- 1 small jicama, julienned
Protein
- 12 ounces boneless leg of lamb, cut into 1-inch cubes
Pantry Items
- 2 tablespoons black or white sesame seeds
- 4 bamboo skewers
STEPS
Mix the marinade or dressing ingredients and divide evenly.
Place lamb cubes in a glass dish and pour half of the marinade or dressing over the lamb.
Cover and refrigerate for at least two hours.
In a large bowl, toss cabbage, carrots, jicama (optional), onions, and sesame seeds.
Remove the lamb and discard the marinade.
Soak bamboo skewers in water for 30 minutes and divide the lamb among the 4 skewers.
On a hot grill, cook the lamb skewers for 5 to 6 minutes per side, or until the desired level of doneness is achieved.
Remove the lamb from skewers, add to the salad, and toss to combine.
To serve, divide the salad evenly among four plates and drizzle with the remaining dressing.
