INGREDIENTS
Fish
- š 2 fillets mackerel (160g)
Vegetables
- 4 shishito peppers
Seasoning
- š§ Pinch of salt
- 1 tbsp sake
- 1/2 tbsp salad oil
Sauce
- 1 tbsp sake
- 2 tbsp mirin
- š¬ 1 tsp sugar
- š§ 1 tbsp soy sauce
STEPS
Make small cuts in the shishito peppers.
Sprinkle mackerel with salt and sake, let sit for 5 minutes, then pat dry with paper towels. Make shallow cuts on the skin side.
Heat salad oil in a frying pan over medium heat, sautƩ shishito peppers briefly, then remove. Place mackerel skin-side down, cook until browned, flip and cook for 2 minutes.
Add the sauce ingredients (sake, mirin, sugar, soy sauce) to the pan, heat until thickened, and coat the mackerel with the sauce.
Plate the mackerel and garnish with the sautƩed shishito peppers.
