INGREDIENTS
Seasoning
- 🧂 2 tablespoons kosher salt
- 1 tablespoon black peppercorns
Seafood
- 🐙 3 ½ pounds octopus, head and beak removed
Cooking
- 2 tablespoons extra virgin olive oil
- 🍋 ½ medium lemon
Garnishing
- ½ tablespoon minced fresh parsley
STEPS
Fill a large pot halfway with water. Add kosher salt and peppercorns, then bring to a boil over high heat.
Place octopus on a cutting board and tenderize using a wooden spoon or mallet. Start at the middle and work down each tentacle.
Dip the tentacles into boiling water 3 times, holding them in for 2-3 seconds each time, until the tentacles curl up.
Completely submerge the octopus in boiling water, reduce heat to low, cover, and simmer until fork-tender (about 45-60 minutes).
Allow the cooked octopus to rest and cool for about 30 minutes.
Preheat an outdoor grill to medium-high heat and lightly oil the grate.
Grill the octopus until charred on all sides, about 3-4 minutes per side.
Remove the octopus, slice into pieces, drizzle with olive oil, squeeze lemon juice over, sprinkle parsley, and season with salt and pepper.
