INGREDIENTS
Main
- 2 cleaned Pacific saury (220g)
- đź§‚ Pinch of salt
- Sufficient amount of all-purpose flour
- 1 tbsp olive oil
- Sufficient amount of grated cheese
Vegetables
- đź§… 1/4 onion (50g), diced
- 1 eggplant (80g), diced
- 100g sweet potato, diced
Ratatouille Sauce
- 🍅 1/2 can diced tomatoes (200g)
- đź§„ 1/2 tsp grated garlic
- 100ml water
- đź§‚ 1/3 tsp salt
- 1 bay leaf
- Pinch of black pepper
- 1/2 tbsp olive oil
STEPS
Cut the Pacific saury into halves, season both sides with salt, and lightly coat with flour.
Dice the onion, eggplant, and sweet potato into 1cm cubes. Soak the sweet potato in water and drain.
Combine diced vegetables and Ratatouille Sauce ingredients in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 7 minutes.
Remove the plastic wrap, stir, and microwave again at 600W for 3 minutes.
Heat olive oil in a frying pan and cook the Pacific saury over medium heat until both sides are browned.
Transfer the Ratatouille Sauce to an oven-safe dish, place the cooked Pacific saury on top, sprinkle with grated cheese, and bake at 200°C for 10 minutes.
