INGREDIENTS
Fish
- 🐟 2 fillets Spanish mackerel
- 🧂 Pinch of salt and pepper
- 🥫 1 tbsp mayonnaise
Vegetables
- Handful of baby leaves
- 🍅 4 cherry tomatoes
Breadcrumb Mixture
- 🍞 3 tbsp breadcrumbs
- 🧄 1/2 tsp grated garlic
- 2 tsp olive oil
- Chopped parsley to taste
STEPS
Finely chop the parsley.
Pat dry the Spanish mackerel fillets, season with salt and pepper, and spread mayonnaise on top.
Mix breadcrumbs, grated garlic, olive oil, and parsley in a bowl.
Place aluminum foil on a baking tray, lay the mackerel fillets, and top with the breadcrumb mixture. Cover with aluminum foil and bake in a toaster oven for 15 minutes. Remove the foil and bake for an additional 3 minutes until golden brown.
Plate the fish and garnish with baby leaves and cherry tomatoes.
