INGREDIENTS
Dry ingredients
- 1 cup regular rolled oats
- 2 cups whole wheat flour
- 🟤 ½ cup brown sugar
- 🧂 2 teaspoons baking soda
- 1 teaspoon baking powder
- 🧂 ½ teaspoon salt
Wet ingredients
- 🧈 ¼ cup melted butter
- 2 teaspoons vanilla extract
- 🥛 1 cup buttermilk
- 12 fluid ounce Guinness
STEPS
Preheat the oven to 425°F (220°C). Grease an 8x8-inch baking pan.
Combine oats, flour, sugar, baking soda, baking powder, and salt in a bowl. In a separate large bowl, mix melted butter, vanilla, buttermilk, and Guinness.
Pour the dry mixture into the wet mixture and stir gently until combined. Transfer batter to the prepared baking pan and sprinkle with extra oats if desired.
Bake at 425°F (220°C) for 30 minutes, then reduce the temperature to 400°F (200°C) and bake for another 30 minutes.
Turn off the oven and let cool for 30 minutes with the door open. Transfer to a wire rack to cool completely.
