INGREDIENTS
Main Ingredients
- 🥚 2 eggs
- 1 piece hanpen
- đź§… 1/2 onion, sliced
- 3 stalks mitsuba
Seasonings
- 1 tbsp mirin
- 1 tbsp sake
- 1/2 tbsp soy sauce
- 1/3 tsp dashi powder
- 150 ml water
STEPS
Cut hanpen into bite-sized pieces. Trim mitsuba roots and cut into 3 cm lengths. Slice the onion thinly.
Crack eggs into a bowl and mix well.
In a frying pan, add seasonings (mirin, sake, soy sauce, dashi powder, and water), onion, and hanpen. Bring to a boil over medium heat and cook for about 3 minutes until the onion softens. Pour in the beaten eggs and cook until semi-set. Turn off the heat and serve with mitsuba on top.
