- 🥔 5 medium-sized russet potatoes
- 1 pinch cayenne pepper
- 1 pinch garlic powder
- 🧈 6 tablespoons butter
- 🥚 5 large eggs
- 🥓 4 slices bacon
- 🧀 1/2 cup sharp Cheddar cheese
- 🧀 1/2 cup shredded mozzarella cheese
- 🥛 1 cup heavy cream
STEPS
Preheat the oven to 425 degrees F (220 degrees C) and lightly grease an ovenproof pie pan.
Shred potatoes, lightly salt them, and wring out as much water using a cheesecloth. Pat dried with a paper towel and place in a bowl.
Melt 5 tablespoons butter and combine with potatoes. Season with salt, pepper, cayenne, and garlic powder. Add 1 egg and mix well.
Press potato mixture into the prepared pie pan to form a crust. Place on a baking sheet and bake in the preheated oven for 25 minutes.
While crust is baking, whisk 4 eggs together and season with salt and pepper. Stir in heavy cream.
Remove crust from oven and reduce temperature to 350 degrees F (180 degrees C). Sprinkle bacon onto the crust and layer with cheese. Carefully pour egg mixture over the top.
Bake in the oven until the quiche is puffed and golden, about 30 minutes. Let cool for 5 minutes before serving.
