INGREDIENTS
Meat
- 3 pounds chuck roast
Seasoning
- 🧂 Salt to taste
- Ground black pepper to taste
Liquid/Broth
- 1 cup reduced-sodium beef stock
Vegetables
- 🧅 2 onions, chopped
- 🥔 2 pounds potatoes, peeled and cubed
- 🥕 3 carrots, chopped
- 1 stalk celery, chopped
Herbs
- ¼ cup chopped fresh parsley (Optional)
STEPS
Season chuck roast with salt and pepper.
Heat a skillet over medium-high heat; brown roast on all sides for about 4 minutes per side. Transfer roast to the slow cooker.
Pour beef stock into the skillet, bring to a boil, and scrape browned bits off the pan bottom. Add the broth and onions to the slow cooker. Cover and cook on Low for 5 hours.
Add potatoes, carrots, celery, and parsley to the slow cooker. Cover and cook on Low for an additional 3 hours until roast is tender and cooked through.
