INGREDIENTS
Dry Ingredients
- ¼ cup white sugar, divided
- 1 ½ teaspoons ground cinnamon
- 4 ½ cups all-purpose flour
Yeast Activation
- 2 ½ teaspoons dry yeast
- 💧 ¾ cup warm water
Wet Ingredients
- 🥚 2 eggs
- ¾ cup applesauce
- 🧂 ½ teaspoon salt
- 🍯 2 tablespoons honey
Filling
- ½ cup raisins
STEPS
Stir 1 tablespoon sugar and yeast into warm water (at most 100°F/40°C). Let stand for 5 minutes until creamy foam forms.
Whisk together cinnamon and 2 tablespoons sugar in a small bowl. Set aside.
In a large bowl, beat together eggs, applesauce, salt, and the remaining sugar.
Stir in yeast mixture. Gradually add half the flour, then mix well. Continue adding remaining flour, ½ cup at a time, until sticky dough forms.
Knead dough on a lightly floured surface until fairly smooth but still slightly sticky, about 8 minutes.
Lightly oil a large bowl and place dough inside. Cover with a cloth and let rise in a warm place for 30 minutes.
Grease a 9x13 inch baking pan. Deflate the dough, then roll it into a 16x20 inch rectangle on a floured surface.
Spread honey over the dough. Sprinkle cinnamon sugar and raisins evenly on top.
Roll dough tightly into a log, pinch to seal seam, and cut into 12 equal pieces. Arrange pieces in the prepared pan, cut side up.
Cover the pan with a damp cloth and let rise until doubled in volume, about 30 minutes.
Preheat oven to 350°F (175°C).
Bake rolls in preheated oven until golden brown, about 30 minutes.
