INGREDIENTS
Main
- 200g ground meat
- 🍆 2 medium eggplants (160g)
- đź§‚ Pinch of salt and pepper
Meat Mixture
- 3 tbsp breadcrumbs
- 🥛 3 tbsp milk
- đź§‚ 1/3 tsp salt
- đź§‚ Pinch of pepper
- đź§„ 1/2 tsp grated garlic
Herb Crumb Topping
- 2 tbsp breadcrumbs
- đź§€ 2 tbsp grated cheese
- 4 sprigs chopped parsley
- 1 tbsp olive oil
STEPS
Slice the eggplants into 5mm thick rounds after removing the stems.
In a bowl, soak breadcrumbs in milk. Add ground meat and the remaining meat mixture ingredients, mixing until sticky.
In another bowl, combine the herb crumb topping ingredients.
Layer 1/4 of the eggplant slices in a heatproof dish, spread 1/3 of the meat mixture on top. Repeat for 3 layers, finishing with the remaining eggplant slices. Sprinkle with salt and pepper.
Cover loosely with plastic wrap and microwave at 600W for about 10 minutes until cooked through. Top with herb crumb mixture and bake in a toaster oven for 5–6 minutes until golden brown.
