- 🥑 1 avocado
Herb Breadcrumbs
- 🍞 2 tbsp breadcrumbs
- đź§€ 1 tbsp grated Parmesan cheese
- 🌿 2 sprigs parsley, minced
- đź§‚ 1/4 tsp salt
- A pinch of black pepper
- 1 tbsp olive oil
STEPS
Cut the avocado in half lengthwise, remove the seed and peel. Slice into 5mm thick pieces.
In a bowl, mix breadcrumbs, Parmesan cheese, minced parsley, salt, pepper, and olive oil.
Arrange the avocado slices on a heatproof dish and sprinkle the herb breadcrumb mixture evenly over them.
Bake in a toaster oven for 5-6 minutes until the breadcrumbs are golden brown.
