INGREDIENTS
Seaweed
- 5g dried hijiki
Vegetables
- 1/4 daikon radish
- 1/2 cucumber
Seasonings
- đź§‚ 1/2 tsp sugar
- 2 tsp soy sauce
- 🍋 1 tbsp lemon juice
- 1 tbsp sesame oil
- 1/2 tsp grated ginger
STEPS
Rehydrate the dried hijiki according to the package instructions, then drain the water.
Julienne the daikon radish and cucumber, place them in a bowl, sprinkle with a pinch of salt, and massage for 3 minutes. Squeeze out excess water.
Boil water in a pot, add the hijiki, and cook for about 2 minutes. Drain and let it cool to room temperature.
Mix all the seasonings (sugar, soy sauce, lemon juice, sesame oil, and grated ginger) in a bowl. Add the prepared vegetables and hijiki, then mix well.
