INGREDIENTS
Rice and Grains
- 💧 1 ½ cups water
- 🧂 ½ teaspoon salt
- 🍚 ¾ cup uncooked brown rice
Vegetables
- 🧅 1 ½ cups chopped onion
- 🧄 1 clove garlic, minced
- 🥕 2 carrots, sliced
- 🍄 2 cups fresh sliced mushrooms
Protein and Others
- 1 cup chickpeas
- 🥚 2 eggs, beaten
- ¼ cup chopped fresh parsley
- ¼ cup chopped cashews
- Freshly ground black pepper
Fats and Oils
- 🧈 3 tablespoons butter
STEPS
Bring 1-1/2 cups water to boil, add rice. Bring contents back to a boil, cover the pot and simmer for 45-50 minutes, or until rice is tender.
Approximately 20 minutes before rice is finished cooking, heat butter in a large skillet over medium heat. Stir in onions and saute until softened. Add garlic and carrots; cook for 5 minutes.
Add mushrooms to the skillet and cook until they begin to brown, about 10 minutes. Add chickpeas and cook 1 more minute.
When rice finishes cooking, pour beaten eggs into the skillet and cook, stirring constantly, until eggs are fully set. Remove skillet from heat, and stir in black pepper, parsley, and cashews.
Add cooked rice to the skillet and mix well. Serve hot with soy sauce on the side for added flavor.
