INGREDIENTS
Spices and Seasonings
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- 🧂 1 teaspoon salt
- 1 teaspoon ground black pepper
- ¼ teaspoon cayenne pepper
- ¼ teaspoon garlic powder
Protein
- 🍗 1 ½ pounds skinless, boneless chicken breast, cut into strips
Oils
- 4 tablespoons olive oil, or more as needed
Vegetables
- 2 bell peppers, sliced
- 🧅 1 onion, thinly sliced

- 8 (6 inch) flour tortillas
STEPS
Whisk chili powder, paprika, salt, pepper, cayenne pepper, and garlic powder for fajita seasoning together in a small bowl.
Trim chicken and place in a large bowl. Add 2 tablespoons olive oil and 3/4 of the fajita seasoning, then toss to coat. Poke with a knife for seasoning absorption. Refrigerate for 4–6 hours.
Remove chicken from the fridge, allowing it to reach room temperature (~1 hour).
Preheat the grill and lightly oil the grate. Preheat oven to 350°F (175°C) and wrap tortillas in foil.
Heat 2 tablespoons olive oil in a skillet over medium heat. Add peppers, onion, and remaining fajita seasoning. Cook for 8–10 minutes until soft.
Warm tortillas in the oven while grilling chicken on the grill for 2–3 minutes per side until fully cooked.
Assemble the fajitas by filling tortillas with chicken, peppers, and onions.
