INGREDIENTS

- 🧂 ¼ cup white sugar
- 🥚 1 large egg white
- 🥛 1 tablespoon milk
- 🧈 1 tablespoon butter, melted
- ⅛ teaspoon vanilla extract
- ⅛ teaspoon almond extract
- 🧂 1 pinch salt
- 🌾 ⅓ cup all-purpose flour, or more as needed
STEPS
Print and cut out 3-inch wide paper fortunes.
Preheat the oven to 350°F (175°C). Line a baking sheet with a silicone mat or parchment paper.
Whisk sugar, egg white, milk, butter, vanilla extract, almond extract, and salt together in a bowl until sugar is dissolved. Add flour; whisk until batter is smooth and falls off the whisk in ribbons.
Scoop 1 tablespoon of batter onto the prepared baking sheet; spread into a 4-inch circle using the back of a spoon. Repeat for 2 cookies per batch.
Bake in the preheated oven until crispy and golden brown on the edges and pale in the centers, about 10 minutes.
Quickly remove 1 cookie with a spatula, insert a paper fortune, fold the cookie in half, and press the edges lightly. Bend the long side over the rim of a baking sheet and curl the ends to form a fortune cookie shape. Place in a ramekin or muffin tin to cool.
Repeat scooping, baking, and shaping with the remaining batter, working in small batches to ensure cookies remain pliable. Once cool, remove cookies from ramekins or tins.
