INGREDIENTS
Dough
- 2 cups all-purpose flour, plus more for dusting
- 🥚 3 large eggs
- 1 teaspoon olive oil
- 🧂 ½ teaspoon kosher salt
Filling
- ½ cup whole milk ricotta cheese
- 🧀 ¼ cup shredded mozzarella cheese
- ¼ cup shredded provolone cheese
- 1 tablespoon grated parmesan
- 🥚 1 large egg
- ¾ teaspoon dried parsley
- 🧂 ¼ teaspoon kosher salt
- 1⁄8 teaspoon black pepper
Sauce
- 2 tablespoons olive oil
- 2 cloves garlic, finely chopped
- 3 tablespoons prepared basil pesto
- 🥛 1 cup heavy cream
- ¼ cup grated Parmesan cheese
- 1 1⁄3 cups marinara sauce
STEPS
Gather all ingredients.
To prepare ravioli dough: Combine flour, eggs, olive oil, and salt, and knead until smooth.
Wrap dough and allow to rest at room temperature.
Prepare ravioli filling by combining cheeses, egg, parsley, salt, and pepper.
Divide dough into portions and roll into thin sheets using a pasta machine or rolling pin.
Place filling on dough sheets, cover, seal and cut into ravioli squares.
Prepare pesto-Alfredo sauce in a skillet using olive oil, garlic, pesto, cream, and Parmesan.
Warm marinara sauce over medium heat.
Cook ravioli in boiling salted water until they float to the top.
