INGREDIENTS

- 🌰 1 1/2 cups pistachios
- 🥛 3/4 cup whole milk
- 🍫 1 cup white chocolate chips
- 🧈 2 tablespoons unsalted butter
- 🍬 2 tablespoons confectioner's sugar
- 🧂 1/2 teaspoon kosher salt
- 1/2 teaspoon almond extract
- 1/4 teaspoon vanilla extract
STEPS
Bring a pot of water to a boil. Add pistachios and boil for 2 minutes. Drain, rinse with cold water, and drain again.
Rub pistachios in a towel to remove skins. Peel remaining skins off and place pistachios in a blender.
Microwave 1/4 cup milk, white chocolate chips, and butter in a bowl at 50% power in 30-second intervals until smooth.
Add remaining milk, confectioner's sugar, salt, almond extract, and vanilla extract to the blender. Add melted white chocolate mixture.
Blend the mixture starting at low speed and gradually increasing to high. Blend for 2 to 3 minutes until smooth, scraping down sides as needed.
Transfer the pistachio cream to a glass jar, let cool, and store in the refrigerator.
