INGREDIENTS
Crust
- 2 cups all-purpose flour
- 🧂 1 teaspoon salt
- ¾ cup shortening
- 💧 6 tablespoons cold water
- 1 teaspoon distilled white vinegar
Filling
- 🥚 4 eggs, lightly beaten
- ¼ cup packed brown sugar
- ¼ cup white sugar
- 🧂 ½ teaspoon salt
- 1 cup light corn syrup
- 🧈 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- 1 tablespoon bourbon (Optional)
Topping
- ⅓ cup packed brown sugar
- 🧈 3 tablespoons butter
- 🍯 3 tablespoons honey
- 1 ½ cups pecan halves
STEPS
Preheat oven to 350 degrees F (175 degrees C).
To make the crust, mix flour and 1 teaspoon of salt in a bowl. Cut in shortening until crumbly. Gradually add water and vinegar until the mixture holds together, then form into a ball and chill for 20 minutes.
Roll out dough between wax paper into a circle 1/8 inch thick and press into a 9-inch pie pan.
Make the filling by combining eggs, sugars, salt, corn syrup, melted butter, vanilla extract, and chopped pecans in a bowl. Add bourbon if desired. Mix well and pour into the pie shell.
Bake in preheated oven for 15 minutes. Cover edges of pastry with foil and bake for another 20 minutes.
Prepare the topping by combining brown sugar, butter, and honey in a saucepan over low heat. Stir occasionally until sugar dissolves, then add pecans and stir until coated.
Spoon the topping evenly over the pie, cover the pastry edges with foil, and return to oven for 10 to 20 minutes until bubbly and golden brown. Cool to room temperature before serving.
