INGREDIENTS
Base ingredients
- 2 tablespoons extra-virgin olive oil
- 🧅 1 small white onion
- 🧄 2 medium garlic cloves
- 1 1-ounce less-sodium taco seasoning mix
- 🍅 1 16-ounce mild roasted tomato salsa
- 1/2 cup cream cheese
- 🧂 1/2 teaspoon kosher salt
- 2 (15-ounce) cans black beans
- 1 (14.75-ounce) can fire-roasted corn
- 1 (4-ounce) can green chiles
- 1/2 cup sour cream
- 🍗 4 cups rotisserie chicken, shredded
- 2 cups Monterey Jack cheese
STEPS
Preheat oven to 350°F (175°C) and gather all ingredients.
Heat olive oil in a large skillet over medium heat. Add onion, garlic, and cook until softened, about 5 minutes.
Add taco seasoning and cook for 1 minute. Stir in salsa, cream cheese, and salt. Stir until cream cheese is melted and mixture is smooth, around 3 minutes.
Add black beans, corn, green chiles, and sour cream. Mix thoroughly.
Stir in shredded rotisserie chicken and remove mixture from heat.
Transfer mixture to a 9x13-inch baking dish. Spread evenly and top with Monterey Jack cheese.
Bake in preheated oven until bubbly, approximately 25 minutes.
Increase oven temperature to broil. Broil casserole until cheese is browned, around 4-5 minutes.
Optional: Garnish casserole with tortilla strips, fresh cilantro, scallions, or pickled red onions.
