INGREDIENTS
Marinade
- 2 teaspoons hot pepper sauce
- 🍋 1 tablespoon fresh lemon juice
- 2 teaspoons olive oil
Chicken
- 🍗 4 boneless, skinless chicken breasts (about 4 ounces each)
- 1 cup cornflake crumbs (about 2 cups flakes)
Ranch Sauce
- 1/4 cup light (or fat-free) sour cream
- 🥛 1/4 cup low-fat (1%) buttermilk
- 🧄 1/2 teaspoon garlic powder
- 1/4 teaspoon dried dillweed, crumbled
STEPS
In a large shallow bowl, mix together hot pepper sauce, lemon juice, and olive oil.
Add chicken breasts to the marinade and turn to coat. Cover and refrigerate for 30 minutes to 8 hours. Discard marinade afterwards.
Preheat oven to 375°F (190°C) and lightly spray an 8-inch square baking pan with vegetable oil spray.
Place cornflake crumbs on a plate. Turn chicken breasts to coat both sides in crumbs. Transfer to the baking pan and lightly spray tops with vegetable oil spray.
Bake chicken for 30 minutes or until internal temperature reaches 165°F and coating is crisp. Transfer to serving plate when done.
In a small bowl, whisk together sour cream, buttermilk, garlic powder, and dillweed. Refrigerate until ready to serve.
Spoon the ranch sauce over chicken or use as a dipping sauce.
