STEPS
Mix oysters and potato starch in a bowl. Add water and gently wash the oysters. Replace the water until it runs clear. Drain and pat dry with kitchen paper.
Place a sheet of plastic wrap on a tray and arrange the oysters on it. Cover with another layer of wrap or place in a bag. Freeze for 1–2 hours until solid. Transfer to a freezer bag, remove air, seal tightly, and store in the freezer.
