INGREDIENTS
Fish
- 2 Pacific saury (300g)
- đź§‚ 1/4 tsp salt
STEPS
Place the Pacific saury with its head to the left and back facing up. Insert a knife from the head to the base of the ventral fin to cut the backbone.
Turn the fish belly up and make a small incision 1–2 cm before the anus.
Gently hold the head and body, tilt the head slightly downward, and slowly pull to remove the innards.
Wash the fish under running water and pat dry thoroughly with kitchen paper.
Sprinkle salt on both sides of the fish and let it sit for 5 minutes. Wipe off any moisture with kitchen paper.
Wrap each fish tightly in plastic wrap. Place them in a freezer bag, remove air, and seal. Store in the freezer.
