INGREDIENTS
Batter
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground allspice
- 1 (8 ounce) can crushed pineapple
- 1/2 cup white sugar
- 1/4 cup packed brown sugar
- 1/2 cup salted butter
- 1/4 cup whole milk

- 2 teaspoons vanilla extract
- 1/2 cup pecans
Streusel
- 1/4 cup all-purpose flour
- 3 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 3 tablespoons salted butter
- 1/3 cup pecans
STEPS
Preheat the oven to 350°F (180°C). Line 12 standard muffin cups with paper liners or coat with cooking spray.
Prepare the batter by whisking together flour, baking powder, cinnamon, salt, baking soda, and allspice in a small bowl.
In a large bowl, whisk bananas, pineapple, white sugar, brown sugar, melted butter, milk, egg, and vanilla.
Fold in the flour mixture until just combined. Fold in pecans.
Distribute the batter evenly into the muffin cups, filling them nearly full.
To make the streusel, combine flour, brown sugar, cinnamon, and salt in a bowl. Cut in the butter until the mixture resembles coarse crumbs. Stir in pecans.
Sprinkle the streusel evenly over the batter.
Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes.
Let the muffins cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.
