INGREDIENTS
Condiments and Syrup Base
- 1 ½ cups distilled white vinegar
- 1 ½ cups granulated sugar
- 1 ½ cups packed light brown sugar
- ½ teaspoon turmeric
- ½ teaspoon celery seed
- ½ teaspoon garlic powder
Main Ingredient
- 🌶 1 ½ pounds jalapeno peppers, sliced into 1/2-inch-thick rings
STEPS
Inspect canning jars for cracks and rings for rust; immerse in simmering water until ready. Wash new lids and rings in warm soapy water.
Combine vinegar, granulated sugar, brown sugar, turmeric, celery seed, and garlic powder in Instant Pot. Stir until sugar softens. Add jalapeno rings and stir to combine.
Close and lock the Instant Pot lid. Set to high pressure for 0 minutes and allow 15 minutes for pressure to build.
Quick-release pressure carefully, about 5 minutes. Unlock and remove the lid. Use a slotted spoon to transfer jalapeno rings to sterilized canning jars.
Select Saute function on Instant Pot, cook liquid for 8 minutes, then turn off and let cool for 10 minutes.
Pour syrup over jalapeno rings, seal jars, and refrigerate for at least 5 days before serving.
