    • 3 green onions, chopped
    • 2½ pounds russet potatoes, peeled and cubed

    • 🥛 ½ cup milk

Turn on Instant Pot and select Saute function. Add 1 tablespoon butter and olive oil. Allow butter to melt and add cabbage and green onions. Cook until wilted, about 2 minutes, then turn pot off.

Remove the liner and mash the potatoes with milk using a potato masher. Let colcannon stand for 3 minutes.

Transfer to a serving dish, create a well in the center, and add remaining 2 tablespoons of butter. Season with salt and pepper to taste.
