INGREDIENTS
Dry Ingredients
- 🌾 ¼ cup all-purpose flour
- 1 teaspoon dried oregano
- 🧂 Salt to taste
- Pepper to taste
Protein
- 🍗 2 chicken breasts, sliced in half horizontally
Cooking Fat
- 2 tablespoons olive oil
- 🧈 3 tablespoons butter
Vegetables
- 🍄 1 cup small fresh mushrooms, stems removed
- 🧅 ¼ cup diced onion
- 🍅 ⅓ cup sun-dried tomatoes
- 2 cups firmly packed spinach leaves
Liquids
- ½ cup Marsala wine
- 💧 ½ cup water
- ¼ cup half-and-half
- 💧 2 tablespoons water
Seasoning and Thickener
- 1 cube porcini-flavored bouillon
- ½ tablespoon potato starch
Pasta
- 1 (16 ounce) package spaghetti
STEPS
Mix together flour, oregano, salt, and pepper in a bowl. Dust chicken slices with this mixture and set aside.
Heat the Instant Pot on Saute mode, add olive oil, and fry chicken until browned for about 4 minutes per side. Remove chicken to a plate. Add butter, mushrooms, and onions; cook for 2 minutes. Add wine, water, sun-dried tomatoes, and bouillon cube. Bring to a simmer and turn off Saute mode.
Place chicken pieces on top of the sauce in the pot, layer spinach over chicken, then close and lock the lid. Pressure cook at high for 4 minutes, then allow 10-15 minutes for pressure to build.
Boil lightly salted water in a separate pot. Cook spaghetti as per package instructions (approximately 12 minutes), drain, and set aside.
Quick-release pressure in Instant Pot, remove chicken, and thicken sauce with potato starch slurry. Stir in half-and-half to make sauce creamy and golden.
Distribute cooked spaghetti amongst plates, ladle sauce over pasta, and top with cooked chicken.
